Cucumber Salad

I have always loved cucumbers.  While others were reaching for the tomatoes in the salad bowl, I was reaching for the cucumbers.  I do like tomatoes, now, but cucumbers have always made me happy.

I learned very young that cucumbers were full of water.  The peel has nutrients, right?

When I make this salad (which is frequently now), I always get so full after.  Why?  The water content, of course.

I have tried to make this recipe by slicing a cucumber with a knife. It was not the same.  While I hate slurping my salad, there is something to be said for creating food that is enticing.  This one does it.

Disclaimer.  It took me over a week before I could operate the machine that does this.


So imagine how proud I was when SpecialK left for a business trip, and I finally got the darned machine to work.

This is what I make with the long strips of cucumber.


Here’s what I add, and if you look carefully, you will see most of these ingredients in the bowl.

1 Cucumber, washed, spiraled.

Low fat feta cheese

1 green onion

Juice of 1/6 of a lemon

1 tsp. evoo

Freshly ground salt and pepper


Put the cucumber in a bowl or container, and let it sit for a bit.  Pour off the excess liquid from the bowl.

Add some low fat feta cheese.

Cut a green onion with a pair of scissors, pieces into the bowl.

Cut a lemon into 6 pieces, squeeze one over the bowl.

Add one teaspoon of evoo to the bowl

Season to taste with salt and pepper.



Like raw onion?  Add one.

Don’t have a green onion?  Add a shallot, or use the raw onion.  I used a green onion because I was out of shallots.

Don’t like feta?  Use goat cheese, or cheddar, or whatever you have in your refridgerator.

I will rarely post amounts for salt and pepper.  For this salad, I used more pepper than salt, as the cheese is somewhat salty.
