Lemon Cupcakes

Right before Beach Week 2016, I made sugarfree lemon curd.  I promised that I would share what I was going to use it for, and I am ready to make the grand reveal.

I have made these same cupcakes previously.

I decided to tweak them a bit, and here’s what I did. I added small spoonfuls (demitasse spoon) of lemon curd inside each of these cupcakes.  Surprise!

I might use the lemon curd in the future to frost these cupcakes instead of using them as a filling.  Either way, they are good!  Yummy, delicious, and completely edible.
