I made something new for dinner tonight. Of course, I forgot to take pictures until it came out of the oven.
SpecialK asked that I make some rice and beans meals. I am not a huge fan of cumin, chili peppers or cilantro. So in order to honor SpecialK’s request, I had to enter, The Spice Cabinet. We have more spices than most of my friends, but at least we use them.
I had 1/2 lb of ground beef leftover from the last time I made meatballs. I had cooked it up with chopped onion and froze it.
I cooked 1/2 C of brown basmati rice in 1 C water with a pinch of salt. Once cooked, I added the defrosted beef to the rice, and added 2 cans of chopped tomatoes. As an aside, while cleaning out the pantry, we found 2 cans of tomatoes that needed to be used up. Those were used today.
I thought about adding mushrooms, and decided to skip it. I added a can of black beans, which were drained and rinsed.
I added some diced up white cheddar we had in the cheese drawer, as well as some Parmigiana Cheese.
Seasonings included salt and pepper, dried basil, oregano, parsley, onion powder and garlic powder. I would suggest using them to your tastes.
Once I had it all mixed up, I put it in a Pyrex dish, and heated at 375 for about 15 minutes. Even after we had dinner, there was still some liquid in the bottom of the pan. The ingredients used made a pan big enough for dinner for both of us, and several more meals.
Dessert? Thanks for asking! I used black beans tonight because we have many cans of black beans here. I have heard about aquafaba (liquid from bean cans) being used for desserts, and I thought why not? I did some internet research and decided to make something chocolate to override the purple color of the liquid. I found a recipe for chocolate mousse, so I made some.
I offered dessert, and did not saying anything about it. I asked if he wanted whipped cream, he declined.
SpecialK liked it! Much healthier than heavy cream, and I love successes!
